Droopy Cheesecake

Cheesecake baked for delivery tomorrow. And it looks delicious! I so wish I could taste it! But my one concern is that it sank in the middle by almost an inch. Does that always happen? It’s been so long since I’ve made one that I just don’t remember. It was simple to fix as the outer edge stayed tall, so I just cut off the tall part and magically had a level cheesecake… But I still don’t think that is supposed to happen.
As long as it tastes good, right? :)
